Guidelines for Handling Raw Meat

When it comes to food safety, raw meats—such as chicken, beef, pork, and seafood—require special care. Consumption of meat that was improperly stored and handled can pose serious health risks, including the potential for foodborne illnesses. By following proper food safety practices and being aware of import regulations, consumers can help protect themselves, their families and the wider community.
Imported Meats
To safeguard public health, all meat imported into Jamaica must undergo a thorough process of inspection and approval by the Ministry of Agriculture, Fisheries and Mining, through its Veterinary Services Division. Assessments done in accordance with the Meat and Meat Products and Meat By-products (Inspection and Export) Act (1999), ensure that:
• Suppliers are certified and reputable.
• Proper storage is maintained and transportation done under regulated cold chain conditions.
• Local health and food safety standards are met.
Unregulated or illegally imported meat products may not meet these standards and may result in serious risks to public health.
Storage Temperature
Raw meats must be kept at or below 4°C (40°F) to prevent bacterial growth. Once the temperature of food is incorrect or inconsistent, it becomes a viable host for harmful bacteria to thrive, making it unsafe for consumption. Dangerous bacteria such as Salmonella, E. coli, or Listeria monocytogenes can multiply rapidly when correct temperatures are not maintained.
Safe Handling
To avoid cross-contamination – bacteria from the meat spreading to other food stuff:
• Always wash hands thoroughly with soap after handling raw meat.
• Separate raw meat and utensils used for these meats from other foods; especially those that will not be cooked – such as vegetables or fruits.
• Dispose of meats that have an odour, slimy texture, or discoloration as these are common indicators of spoilage which means that the meat is no longer safe to eat.
